Foodservice vs. Retail (grocery store) quality
Retail will sell the whole striploin including the tissue end (vein end) of the striploin. The tissue end consists of the connective tissue that is always going to be chewy and or tough. There are at least 4 – 5 tissue end steaks which represents approximately 25% of the overall striploin, therefore most retailers will try and sneak one in when you buy a “value pack” or “family pack”.
